I use PS3 system with a Logitech 'Cordless Vantage HS' Bluetooth headset for voice microphone only, combined with noise-cancelling stereo headset + extension cable to listen to things.
Basically, the headset is voice-input only, and the sound is output to my HDTV via the HDMI cable, along with the video. Then I use a headset to listen to the game - both voice talk from other players and footsteps from everyone.
